Q.   Where can I buy Chicago Meat Authority products?
 
A. CMA sells to the food service and further processor industries through distributors and direct. Trade customers should refer to the Sales Office or Contact Us section. While CMA does not sell directly to consumers, some of our products are available at local GFS Marketplace stores and at restaurants nationwide.
 
Q. My restaurant currently buys a couple of CMA products from a local distributor, we’d like to try more, but our distributor doesn’t offer what we want. How can we get it?
 
A. You can either ask your distributor to special order the item from CMA or contact us for the name of another stocking distributor.
 
Q. Are samples available?
 
A. If you are a restaurant or food service operation, you can order samples of any CMA product. Ask us for more details.
 
Q. Are your meats fresh or frozen?
 
A. Unless otherwise stated, all of our meats are frozen. For most customers, this results in a superior product. The reason is that our products are quickly frozen to very cold temperatures. This locks-in the freshness and preserves it until delivery to you.
 
Q. A lot of other meat companies sell similar products to CMA. How are you different?
 
A. While the long answer to that question is probably best answered by our customers, the short answer is consistently higher quality. Anyone can produce a good sample and hit the same mark once in a while. It takes an enormous investment in people and facilities to consistently sell better products. That’s what CMA has done. Q. I run a buffet style restaurant that really operates lean. What meats would be a good value for our customers and be profitable for us?
 
A. The first recommendation would be to talk to a CMA customer service representative at 800-383-3811. He can learn more about your restaurant and recommend items that fit best with your menu and local tastes. However, the single most popular item for buffets is probably beef short ribs. They are very meaty and filling, yet tasty and affordable.
 
Q. What are some other cuts that can save money for institutional feeders like us?
 
A. While market condition change pricing structures rapidly, some traditional favorite include pork chops (boneless and other types), chopped and formed products and our exclusive Petite`n`Tender Beef Roast
