Blue Plate center cut pork chops are cut from young pork loins, with the tail and chine bones clipped, to popular portion sizes. The scribe is cut within 2 1/2 inches of the eye muscle. The chops are great tasting and lean to ensure tenderness and offer a good value. Special portion cuts are also available upon request.
